Chicken with Creamy Tarragon Sauce

This dinner was great but didn’t reheat very well the next day. The sauce is great and I think would work with fish as well.

I ate this with Roasted Baby Carrots and Coleslaw salad for sides.

 2 lbs Chicken Breast
 2 tbsp Olive Oil
 14.50 oz Chicken broth or stock
 ½ cup Dry White Wine - or use broth
 1 ½ tbsp Cornstarch
 3 tbsp Dijon mustard - coarse-grain
 ¼ cup Sour Cream
 1 tbsp Tarragon - fresh - chopped

Sprinkle chicken lightly with salt and pepper. Cook, in batches, in hot oil in a large nonstick skillet over medium-high heat 3 or 4 minutes or until browned and done. Remove from skillet and keep warm.

I made the mistake of using frozen chicken that had a lot of water in it. I had to drain the pan often, and I over packed the pot This is made the cooking time longer.

Whisk together broth, wine, and cornstarch; add to skillet, and cook, whisking often, until thickened. Stir in mustard, sour cream, and tarragon until blended.

Serve sauce over chicken. Garnish with additional tarragon, if desired.
