Creole Chicken Dinner

This is a simple but delicious dinner. I made a couple of alteration to accommodate what I had in the pantry. That is one of the beauties of this recipe, alterations are easy to do.

Don’t have cans of Diced Tomatoes with basil, garlic, and oregano. Then use fresh diced tomatoes or plain diced tomatoes. Don’t have fresh thyme, you can use dried or none at all. Chicken Stock is great, but you can substitute white wine, water or even cream.

A great addition to the dish as a side dish is Cauli-Rice.

 2 lbs Chicken Breast - bone;ess, skinless - cut into chunks
 1 cup Seasoning Blend - frozen - diced onion, bell peppers and celery (can sub 3 Pepper and Onion blend)
 2 cloves Garlic - minced
 2 tbsp Olive Oil
 29 oz Diced Tomatoes with basil, garlic and oregano - 2 (14.5 oz) cans
 2 tsp Cajun seasoning
 1 tbsp Thyme - fresh (or use 1 tsp dried Thyme)

The first thing to do is to cube the chicken. I found that it was easier to do when the chicken breast was partly frozen.

Since the chicken was partly frozen, I cooked it first.

The iced chicken juice melted and filled the pot with juice. You really don't want to boil the chicken, it could end up rubbery! So, I used a colander to drain the liquid often.

If you use fresh chicken, you may not need to worry about draining the pot.

After the chicken is mostly cooked. Add the oil, seasoning blend and garlic.

Saute for about 6 minutes, or until the seasoning blend is tender.

Add tomatoes and Cajun seasoning.

Simmer 6 to 8 minutes or until the chicken is done and sauce is thickened.

I was out of Thyme, so I just used some cheese.

Thyme would have tasted better 🙂
