Pan-Seared Steak with Balsamic Mustard Sauce, and Bacon Blue Cheese Salad

This is a quick, super delicious meal with a ‘cheater’ side dish. Your main dish is home cooked, but your side is bagged salad for simplicity. You can use any type of beef, but I prefered¬†chuck roast for its cost and tenderness.

I made extra for lunch at work.

 ½ Yellow Onion - large
 1 ½ lbs Steak - anything you have. I used a 3 lb chuck roast.
 1 Garlic - clove, minced
 2 tbsp Olive Oil
 ¾ cup Balsamic Vinegar
  cup Dijon Mustard - or Country Dijon Mustard
 2 tbsp Parsley - fresh, chopped
 1 Bacon-Blue Cheese chopped Salad kit - 12.8 oz, Dole makes a good one
 5 oz Baby Kale

To a hot pan add oil and onion. Cook until onion is tender. Then add garlic. Stir often and cook for about 1 minute.

Here if you need to make a decision. Are you going to stay with the food and stir often or are you doing other things while cooking? If you stay, add the beef. If you need to do other things then remove the onion and garlic. The reason is if you don't stir the meat a lot the garlic may burn.

Add the beef and cook to desired doneness.

After the beef is cooked, you may notice a fair amount of liquid in the pan. You need to get rid of it. Put a large colander, fine hole (so you don't lose the garlic) in the sink and put the beef in it.

Now make the Balsamic Mustard Sauce.

Add the vinegar in the pan and cook about 3 minutes or until it reduces by half. Stir (or whisk) in the mustard.

Add the beef back into the pan.

Add parsley

Make a side dish.

Prepare the salad kit according to directions. Add the kale, toss well.
