Roasted Baby Carrots

This is an easy side dish. The recipe calls for multicolored baby carrots, but I couldn’t find any. Regular orange baby carrots work fine.

 12 oz Baby Carrots - Multicolored
 2 tbsp Olive Oil
 2 Garlic - cloves
 2 Green Onions - chopped

Preheat over to 450 degrees F.

Cut larger carrots in half lengthwise. Combine carrots, oil, garlic and desired amounts of salt and pepper on a rimmed baking sheet; spread in a single layer.

Bake for 20 to 25 minutes or until carrots are browned and tender. Sprinkle with green onions, and toss.
